After opening a new production unit and malting floor in autumn 2018, Kilchoman is now able to malt 30% of its barley on site at up to 20 ppm, sourcing the remaining 70% from the Port Ellen maltings (50 ppm). This cask strength oloroso sherry cask stands out for the fluidity with which the palettes of flavours and aromas are linked. This is complimented by the perfect harmony of the peat and sherry, and a constant development towards increasingly gamy and salty tones.

Description

refined, clean. The key players in the particularly complex first nose are an oily peat, dark chocolate, ash, the smoke of a powerful, sweet cigar and heather honey. Allowed to breathe, it becomes increasingly earthy and rooty (gentian, ginger). At the same time, citrus fruits (lime, pink grapefruit) give a boost, adding evermore elegance to the aromatic palette. Outstanding.

lively, stately. Beginning exactly where the nose left off, the attack is characterized by notes of lime. Rich, it clearly evokes a vanilla custard tart. At the same time, smoke rings float through the palette of flavours. The rooty, peppery mid-palate is also mineral (schist) and floral (hyacinth, jasmine). The end of the palate is then refreshed with almond and coconut milk.

long, distinguished. Malted barley now takes centre stage on the flavour palette, as salt crystals coat the taste buds. The sherry wine releases notes of dried apricot, straw, torrefaction (pipe tobacco) and praline. The retronasal olfaction is herbaceous (sage, rosemary), lemony and peaty. Note that the peat has become drier during the tasting. The intense empty glass is gravelly (limestone, lime), heady (iris butter), ashy and fruity (pear).
