With toasted walnut, salted butter caramel, blackcurrant jam, molasses, prune, varnish, rhubarb, wild bramble, coffee, black tea and stewed apricot… every note adds to a construction that constantly seeks new flavours. These included the mint, bay and eucalyptus leaves that suddenly appear on the aromatic palette.
strong-willed, full-bodied. With a magnificently fibrous texture (liquorice stick), the attack is impressively voluptuous. Heady florals (lily, iris butter, lavender), black berries (blackcurrant, blueberry) and black cherries bring to mind a vintage port in the prime of life. The same sensation is confirmed by the chocolatey flavours that follow. At the end of the palate, juicy, crunchy white peach and William’s pears unexpectedly but wonderfully change the course of the tasting.
long, silky. The start of the finish stands out for its sensual mouthfeel. At this point, a basket filled with white peaches is placed on an antique table. The patina brings notes of precious wood and walnut husk. On the retro-nasal olfaction, greengage plum, damson plum and a hint of stewed blackcurrant add to the fruity register of this extraordinary Kavalan. The empty glass wavers between plantain banana, leather, pine resin and cumin.
