Spice bread, a very pleasant note of balsamic vinegar, blood orange, blackberry coulis, cinnamon and a saltiness that coats the taste buds are all found on the first nose of this superb Kavalan. Allowed to breathe, pipe tobacco, fig, toffee, leather, beeswax, lime blossom honey, cinnamon, nutmeg and candied apricot bring even more nobility to the aromatic palette.
taut, lively. Very well-cooked Mirabelle plum, zan liquorice sweets, vanilla pod and toasted walnut feed a very dense and rich attack. The more herbaceous mid-palate is characterized by rosemary, sage and chervil. Wonderfully compelling, it reveals whole slices of spice bread. With a very pleasant vegetal bitterness (absinthe, bay leaf), it shows incredible freshness. Gradually, black fruits (bramble, blueberry) take over the end of the palate.
long, serene. Evoking a smoking Havana cigar, the start of the finish is exotic (flambéed banana, roasted pineapple). Beautifully oxidative, it then develops notes of coffee and herbal tea. With time, a handful of florals (lily, iris, geranium) add a heady touch to the very end of the palate. The retro-nasal olfaction is then exotic (mango, guava) and the empty glass characterized by gentian, precious wood, walnut husk and forest floor (lichen, moss).
