Glenallachie was bought by Billy Walker and his associates in 2017. This year the distillery produced 750,000 litres of pure alcohol. In order to produce a single malt with various different profiles, the new owners decided to cask the new make spirit at three different degrees: 63.5%, 68% and 72%. These are accompanied by a highly peated version (80 ppm) which represents 20% of the distillery’s production. This monumental bottling is the fourth chapter in a history hand-written by La Maison du Whisky on the theme of sherry-cask maturation, featuring only the most accomplished and extreme examples. Thus it joins the ranks of a very elite group featuring Ledaig 2005, Glenlivet 2007 and Benrinnes 1997.

full-bodied, developed. The aristocratic first nose wavers between precious wood, beeswax, salted butter caramel and mango. Allowed to breathe, strong spices transcend the aromatic palette (star anise, clove, nutmeg, saffron, curry). All of these nuances wonderfully highlight the sherry’s very noble influence. Gradually, a large number of dried fruits and nuts (date, almond, hazelnut, sweet chestnut) add a very slender and mature signature to the picture.

clean, precise. The splendidly liquorice and roasted (coffee, tobacco) attack draws a mentholated line right through to the depths of the palate. Acting as a true backbone, this herbaceous note is gradually covered on the mid-palate in candied apricot, cocoa, pecan nut, spice (star anise, cumin, coriander) and the heady flavours of lime blossom, juniper and lavender. At the end of the palate, Mirabelle plum and corinthian raison accentuate the feeling of fullness emanating from the palette of flavours.

long, silky. At the start of the finish, tonka bean, medlar, apricot stone and cocoa powder spread across the palate. The mellow end of the palate brings to mind a Pedro Ximenez sherry. On the retro-nasal olfaction, aromas of latte and cardamom flood the taste buds as forest floor notes (mushroom, moss) reveal lovely autumnal shades. The spicy and camphoric empty glass is also praline and empyreumatic (pine, cough sweet).
