fine, rich. The remarkably malty first nose immediately takes us to a stunning green and luscious land. With superb herbaceous bitterness (sage, verbena), it gradually becomes very fruity (pineapple, apple, walnut), floral (broom, mimosa), spicy (ginger, cinnamon) and liquorice (stick). At this stage, the rum-cask finish plays the card of discretion, with, at the most, a handful of candied lemons appearing. Note that the aromatic palette is stunningly fresh.
clean, lively. On the attack, very fine notes of sugar cane arrive first on the surface of the flavour palette. Very quickly, however, green barley envelops the sides of the palate. On the mid-palate, a particularly mouth-watering roasted (coffee) and liquorice bitterness brings the tasting towards rustic (dandelion), acidic (lemon, grapefruit) and chocolatey registers. With time, warm cane sugar creates a delicious climax.
long, concentrated. The deliciously vanilla and heady (orange blossom) start of the finish is characterized by rich notes of frangipane and rice pudding cake. With its very refined texture, the end of the palate is very slender. The exotic (banana, pineapple) retro-nasal olfaction wavers between malting barley and freshly cut sugar cane. The empty glass is a subtle blend of green liquorice, walnut husk, ripe pear and cut grass. Spectacular!
