Produced using the optic barley variety, Chichibu’s first peated malt was distilled in June-July 2009 and bottled in November 2009. Once again, it was another stroke of genius from Ichiro Akuto. Whether on the nose or on the palate, this particularly bright bottling showcases an omnipresent peat. Overflowing with charm and naturalness, it is nourished by other flavour and aroma components that flesh out the many facets of its personality. With delicate minerality, it allows us to admire a chromatic palette that alternates between slate grey and bright yellow.

Description

rich, deep. An intense and floral (dandelion, daisy) peat and dense smoke (hearth fire) monopolize a first nose that is also very rich (vanilla custard tart, Normandy apple tart). Allowed to breathe, medicinal (ointment, castor oil, sleet), chocolate, herbaceous (cut hay), malty and herby (sage, savory) notes further accentuate the sensation of fullness and power. Later, a handful of citrus fruits (grapefruit, lemon) and the sublime aromas of flowering lime blossom add a dreamlike dimension to the aromatic palette.

elegant, full. Immediately, the same floral peat floods the palate. Its smooth, oily character is quite simply exhilarating. The generous attack also evokes a meringue lemon tart. On the mid- palate, the smoke of a sophisticated Havana cigar wavers across the sides of the palate. Next, vanilla, fleur de sel and black pepper bring lots of softness and tone to the very complex end of the palate.

long, balanced. At the start of the finish, malted barley and peat rival each other in intensity. Note that the saline, spicy temperament of the flavour palette has become far more intense. Gradually, star anise, clove and nutmeg gleefully appear to ceaselessly prolong the very end of the palate. The retro-nasal olfaction is vegetal (gentian, verbena), ashy, milky (almond, crème fraiche) and earthy. The empty glass takes us deep into a kiln with its intense smoke (haddock, bacon).
