Milk & Honey is Israel’s first whisky distillery. It was founded in 2013 by Mr and Mrs Gal and Lital Kalkshtein, two entrepreneurs from the world of high technology who decided to realize their dream of creating an international Israeli single malt.

We teamed up with the late Dr Jim Swan, the internationally renowned master distiller who has worked with many major distilleries throughout the world.

He acted as our professional advisor and guide for creating the recipe, gathering equipment and selecting raw material. We have very advanced equipment and are supplied with only the finest raw ingredients. We take great care over our cask selection and have a long-term vision for the distillery. Most importantly, however, we have built a distillery in the heart of Tel-Aviv, Israel’s capital of culture and cuisine, a city that never sleeps, on the edge of the Mediterranean Sea. Our single malt whisky will be ready for release at the end of 2019.

Climat

Israel’s climate is characterized, for most of the year, by high temperatures and humidity. This means that the spirit matures faster, so that a 3-4 year-old whisky will seem very mature and complex for its age, so much so that it often surprises international experts. Israel is also lucky enough to have four different climate zones, which gives us a lot of scope for creating contrasts. In addition to the distillery’s warehouses, the region offers many different options for maturation, from the mountainous Safed to the humid Beit Shean, the hills of Jerusalem, the desert of Néguev and the Dead Sea.
